Chocolate Crackle Cookies
Our current favourite treat, these Chocolate Crackle cookies have to be tasted to be believed! Best while warm and fresh out the oven, they never last more than a few minutes when our head pastry chef Paul North makes us a batch!
Ingredients
200g Bitter Chocolate
125g Butter
320g Light soft brown sugar
2 large eggs
190g plain flour
65g Cocoa Powder
2tsp baking powder
1tsp vanilla essence
1tsp cinnamon
1/4 tsp salt
80ml milk
Demerara and Icing sugar to roll
Method
1. Melt the chocolate
2. Cream the butter and sugar until light and fluffy
3. Add the eggs
4. Add remaining ingredients and mix to a smooth dough
5. Place in fridge until firm
6. Roll into 40g balls, then in granulated sugar, then icing sugar
7. Bake at 170 c for 10-15 minutes
