Roisin’s Lush Gluten Free Brownies

These chocolate brownies are a firm favourite at St Brelade’s, especially with the staff,
whenever our Pastry Chef Roisin makes a fresh batch she always seems to have many new friends vising her in the kitchen! Being gluten free they have a lovely sticky texture, just right for a winter night treat.
Makes 8 good sized brownies
Ingredients:
300g Dark Chocolate
275g Caster sugar
165g Butter
5 Eggs
1 tbsp Ground Almonds
Method:
-Pre-heat your oven to 180°
-Slowly melt the butter and chocolate together in a bain marie
-Lightly whisk together the egg and sugar until combined
-Add the ground almonds into the egg mixture
-Fold the chocolate and butter mixture into the egg
-Pour into a large rectangular baking tray
-Bake at 180° for 25 – 35 minutes until there is a slight wobble in the center.
-Remove from the oven and leave to cool
-Slice into desired shapes and serve with Jersey Dairy vanilla ice cream or Jersey cream.
